Ingredients:
8 oz dried red beans
14 oz smoked turkey sausage, thinly sliced
1/2 c chopped onion
1/2 green bell pepper chopped
(1 t minced garlic)
(1/2 t creole seasoning)
7 cups of water
3/4 c rice
I used about 3/4 of an onion (because it was left over from another recipe) and a whole bell pepper (because I love peppers). I chop them pretty coarsely because Joe doesn't care for the texture of them and this way he can pick them out, but he still gets the flavor.
I was excited that this recipe used smoked turkey sausage. This was one of the items that I hated for a long time, just tried again recently, and realized I have been oh so wrong all these years - so yummy!
So basically, after you chop up your onion, pepper, and sausage, you pile everything in the crock pot (except for the rice). I highly suggest that you invest in these crock pot bags. They are such a life saver! There is practically no clean up and definitely no scrubbing of the crock pot when you are done.
At this point your mouth will be watering because it smells soooo good! So in the crock pot goes your onion, pepper, sausage, garlic, dry beans, and creole seasoning. Stir this up good and add your 7 cups of water. Stir again. Set your crock-pot to cook on low for 8 - 10 hours, or until the beans are tender.
Cook your rice according to the package and serve the beans over the rice. If you like it hot, you can add hot sauce to flavor the rice and beans. Enjoy!!
