Whole Wheat Chocolate Chip Banana Bread

I love banana bread…and I love chocolate…so why not put them into a beautiful marriage together?  This recipe turned out so yummy and delicious.  It was super quick and easy to throw together and it packs nicely in a lunch box!

Ingredients

  • 1 1/4 cup all-purpose flour
  • 1/2 cup whole wheat flourchocchipbread1
  • 1 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 cup mashed banana (about 2 medium bananas)
  • 1 teaspoon vanilla extract
  • 12 ounce bag of mini chocolate chips
  • Cooking Spray

Preheat the oven to 350 degrees.  In a small bowl, whisk together both flours, baking soda, and salt.  Combine sugar and oil in a medium bowl and beat at medium speed with an electric mixer until smooth.  Add your egg and beat until it is light in color.  Add flour mixture alternately with banana, making sure you blend well after each addition.  Stir in vanilla and chocolate chips (yep…the WHOLE bag!).  Pour your batter into a greased 8x4x2” loaf pan.  Bake for 40 – 50 minutes, or until a toothpick comes out clean.  Make sure you cool the bread completely before slicing it.

This little treat went so fast, I almost didn’t even get a picture of the finished product! Surprised smile
