Who doesn’t love fried chicken?? Um, that’s right…no one! But really, eating deep fried chicken it not the healthiest way to go, so we tried this oven “fried” chicken and even made our own bread crumbs. It turned out so delicious!!
6 slices of bread
1/2 c finely shredded sharp cheddar cheese
3/4 t ground chili powder
1/2 t salt
2 lbs chicken (cut of your choice)
2 eggs, beaten
Toast your bread. Let the bread cool, then tear into chunks. Process in the food processor to make coarse breadcrumbs.
In a shallow dish, combine crumbs, cheese, chili powder and salt. Rinse the chicken and pat dry. Dip the chicken into the beaten egg and roll in the bread crumb mixture to coat. Place on a sprayed baking skeet.
Bake at 375 until browned, 30 – 45 minutes.
